Classic Prawn Cocktail
In our house, we are random. We don’t play by the rules! We have breakfast for dinner, starters for lunch and generally do whatever we feel like.
My logic is, the world is so unpredictable and uncontrollable, when it comes to our food and our family time, we go with the flow…. within reason of course! You won’t catch me having a glass of wine for breakfast… I think :)
So, here’s a classic starter for you. One I really love ordering at restaurants. It has a couple of my favourite things - avocados, prawns and the amazing combination of sweet, tangy and spicy. So I thought one day, why wait to go to a restaurant, when I can make it myself. Besides, we don’t know when we’ll be allowed “outside” again, anyway!
So here we go!

Cook Time: 5 mins
yield: 6 portions
Ingredients:
400g raw king prawns, peeled
3 tablespoons mayonnaise
1 tablespoon tomato ketchup
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice, plus lemon wedges, to serve
1/4 teaspoon paprika
1/4 teaspoon black pepper
1 ripe avocado, sliced lengthwise
2 cups shredded lettuce
Instructions:
Cook the prawns: Add the prawns to a large pot of salted boiling water. Cook for 4 minutes, until pink and cooked through. Drain and leave to cool.
While the prawns cool, combine the sauce. In a bowl, mix together the mayonnaise, ketchup, Worcestershire sauce, lemon juice and spices. Taste and season with salt and pepper.
Mix the prawns in the sauce
Assemble: Divide the avocado slices across 6 cocktail glasses and add lettuce to each glass. Add the prawn cocktail mixture and top each glass with a sprinkle of paprika and a lemon wedge.
