Pineapple- Cinnamon Margarita

It’s a teeny weeny tiny mild twist on a classic. In fact the introduction of pineapple is so inconsequential, it’s pretty much just a regular margarita….. NOT! Haha. but seriously though, the pineapple margarita is so mainstream, it might as well be grouped with the classics anyway.

The cinnamon and pineapple combo sounds weird until you try it. And once you do…. well, I’ll just repeat what I said to a friend recently….. Get you a large bottle of tequila, cos you’re going to be making this one A LOT!

For my teetotalling (and/or pregnant) friends, there’s a cheeky mocktail substitute here as well, so don’t run away just yet! So get muddling, shaking, mixing and straining…. and let’s drink up!

yield: 2 glasses

Ingredients:

For the Lime Margarita Salt

  • 2 tablespoons salt

  • 1 tablespoon sugar

  • Zest of 1 lime

For the Pineapple Margarita

  • 1/2 cup pineapple chunks

  • 1 lime wedge

  • 2 tablespoons freshly squeezed lime juice

  • 1/4 teaspoon cinnamon

  • 90ml silver tequila (Replace with ginger ale or club soda for mocktail option)

  • 90ml pineapple juice

For the Garnish

  • Lime wedges

  • Pineapple wedges

Instructions:

  1. In a small flat plate or shallow bowl, combine the lime zest, salt and sugar.

  2. Rim the edge of 2 margarita glasses by first using a lime wedge to rub across the rim and then dipping the glasses in the lime margarita salt. Set aside.

  3. In a cocktail shaker, muddle the pineapple chunks and lime wedge

  4. Add the lime juice, cinnamon, tequila, pineapple juice and ice to the shaker and shake for about 30 seconds.

  5. Add ice cubes into salt rimmed glasses and strain the contents of the shaker into the glasses.

  6. Garnish each glass with a lime wedge and pineapple wedge or however you like. Serve immediately.
