Fluffy doughnuts with an indulgent nutella, jam or cream filling

My goodness! This one was sooooo bad… sorry I meant soooo good! This is one of those indulgences I allow myself on occasion. Frequency and in fact definition of “occasion” is solely my business and you shall not ask! Okay? Okay!

Before making this beauty, you have to accept a few things:

  1. You will be using more than one filling. Heck, use all three! I’m all about the full experience.

  2. You will be eating at least 3 pieces, because come on, you have to taste them to be sure they’re okay for your guests, family, kids, self…. Yup just being a thorough and conscientious host.

  3. You will be happy.

  4. You shall not think about weight, bloat, health or “doing the right thing” for at least 24 hours afterward. If you do, then you have no choice but to get your shoes on and workout. Sorry! But it’s totally worth it I promise!

  5. Remember. I warned you!

Tips: A deep fryer makes this so so easy. Use one if you have. Otherwise a hollow pan does the trick much better than a flat pan if you ask me.

Ingredients (Makes 16-20 doughnuts)

·  500g Flour

·  90g – 100g Sugar (depending on your taste)

·  2 teaspoons Dry Yeast

·  1 teaspoon Salt

·  50g unsalted butter (room temp)

·  Water to achieve a bread-like texture

·  Milk (optional – 3 tablespoons powdered milk can be mixed with the water to achieve the same consistency required)

·  Generous portion of castor/ icing/ good old granulated sugar (for dipping the fried doughnut)

·  Oil for frying

 

Method

1. Mix flour, sugar, yeast, salt and butter to a homogeneous mixture (somewhat crumbly)

2. Make a well in the mixture and add water (+ milk). Mix together to get a dough

3. Place the dough in a warm place for about 1-2 hours to rise (minimum 1 hour) to about double in size

4. When dough has risen, punch out the air and knead for about 2 minutes. Then split dough into 4 balls; flatten dough balls to about 1/4 inch height and cut 4-5 round shapes out of each ball using a round cookie cutter or a wide rim glass cup. Ensure all sides are smooth. It will seem flat but don’t worry, it will rise when it sits and also in the oil

5. Leave dough mounds for about 20-30 mins to rise.

6. If making vanilla cream filling, do it now (see recipe below)

7. Deep fry the doughnuts

8. Roll individual doughnuts in a bowl of castor/icing/ granulated sugar

9. Using the base of a fork, create a hole to the side of each doughnut for the filling

10.  Fill with jam, Nutella, custard or vanilla cream filling

Vanilla Cream filling

Ingredients:

  • 1 cup unsalted butter, softened

  • 3 cups powdered sugar

  • 2 tablespoons whole milk

  • 1/2 teaspoon vanilla 

Method:

1. In bowl, place butter and powdered sugar. Beat using a whisk until well mixed. Beat about 4-6 minutes or until soft and fluffy.

2. Scrape down bowl

3. Add milk and vanilla

4. Beat 4 minutes longer
