Banana Bread with Honey

I don’t think there’s anyone left that hasn’t tried banana bread. I mean come on! We were all locked down at some point this year. And you must have had bananas about to go bad during those weeks of binge eating the wrong things as a coping mechanism. 

Anyway, I’m thoroughly convinced no one hasn’t had banana bread since March. And the few people in my time zone who haven’t made some have definitely had mine. My poor friends and neighbours! I stressed out their scales and calorie counters with this one.

I remember popping over to see my neighbour Cynthia the night before she was to drive about 5 hours to the UK for a family event. Sometime around 10pm as we sat at her kitchen table and she was packing while we sipped on some bubbly (had to empty the bottle before going), she mentioned she had 3 ripe bananas that would most certainly not survive the trip. So what did I do? Yup, you know me afterall. I took them home, got to baking around midnight (so so zen) and made her a lovely variation of this recipe - coconut and chocolate were involved, delivered it to her door just before they headed out in the morning and just like that, breakfast for her family of 4 on their road trip was sorted!

So, you see my point, I’m sure. What’s a few calories and kgs when everyone is satisfied? Win-win, if you ask me.

Ingredients

·  250g flour

·  1 teaspoon baking powder (optional – can leave out if you want a denser loaf)

·  2 teaspoons nutmeg powder

·  1 teaspoon salt

·  5 ripe bananas

·  2 eggs

·  250g Greek yogurt

·  100ml honey

·  250g nuts & seeds (mixed nuts, raisins, seeds)

 

Method

1. Preheat oven to 180 degrees Celsius

2. Grease and flour baking pan

3. In a large bowl, sift the dry ingredients (flour, baking powder, nutmeg, salt)

4. Mash the bananas in a bowl using a masher or a fork

5. Whisk the eggs and mix in the Greek yogurt, mashed bananas and honey

6. Fold the flour mixture into the banana puree

7. Mix in the nuts and seeds

8. Bake in oven for approx. 30 minutes, or when a skewer inserted in the centre comes out clean

9. Leave to cool and serve with anything really
