Air-Fried Garlic Plantain Wedges

I know fried plantains can never get boring so I’m not going to sell this one by saying it’s an interesting twist on your usual way of eating plantain. Because everyone knows you can never have too much plantain, and you can never get tired of new ways of making plantain. It’s so versatile!

Growing up in Port Harcourt, and with a father who always made sure we had plantains sent over almost weekly from his plantation in the village, a good portion of my diet was plantains. So trust me when I say I thought had had plantain in every conceivable form - unripe plantain porridge, grilled plantain, roasted plantain (bole), fried plantain (dodo), boiled plantain, plantain in onunu…. So you can imagine my joy when I was trying out air-fryer recipes and this one came to me! I just had to rush into it, and unlike most rash decisions where that is the case, I didn’t regret it. And I’m pretty sure you won’t as well.

So, I don’t think I really need to say anything about this dish (having said all of that Hahaha). I mean, it’s plantains (yummy), they’re seasoned with a coconut oil and garlic rub (tasty) air-fried (easy and healthy), plantains (I know I’m repeating that but you know why….)

For those who don’t know why, here’s the reason. Because…. plantains!

Prep Time: 5 mins

Cook Time: 15 mins

yield: 4 portions

Ingredients:

  • 2 large, ripe plantains

  • 1 tablespoon Coconut oil

  • 1 tablespoon garlic powder or minced garlic

  • Pinch of salt

Instructions:

  1. Peel and cut plantain wedges - Cut in half, then slice each half length-wise into 4 rectangular chunks

  2. Mix coconut oil, garlic and salt in a bowl

  3. Rub oil mix on plantain wedges and place in air-fryer at 170 degrees Celsius (350 degrees F) for 15 minutes, turning over plantain wedges as the 10 minute mark

  4. Serve warm with avocado chili aioli, omelette, rice, stew, or eat by itself for a quick snack.
